TRADITIONAL COLD SMOKING

We are incredibly passionate about cold smoking all of our seafood on site to ensure the perfect flavour infusion.

We take the fresh catch and allow the smoke to slowly over 3-4 hours in our traditionally built wood smoker.

 

 

SEAFOOD CURING  

We cure all of our seafood on site, changing the curing ingredients seasonally. Our most popular ingredients to use in curing are dill, fresh lemon, seasonal beetroot and local gins too.
